Tuna is a fish that is high in protein, vitamin D, and omega 3 fatty acids, all helpful to the functioning of the body. There are several different ways to eat tuna, one of the most common being from a can. This fish can also be purchased fresh and cooked on the grill for a special summer meal. There are quite a few recipes for tuna skewers with different added ingredients. The following basic recipe makes enough to feed four people.
You will need:
- 1 ½ pounds yellow fin tuna (sushi grade), cut into 1 ½ inch cubes
- ¼ cup and 2 tablespoons extra virgin olive oil
- 3 tablespoons fresh lime juice (squeezed from 2 limes)
- 3 tablespoons chopped fresh cilantro
- Freshly ground pepper
- Coarse salt
- 4 skewers
Step 1: Preheat gas or charcoal grill to medium. If using a charcoal grill, it is hot enough when a hand can be held approximately five inches over the grill for a period of five to six seconds.
Step 2: Combine the tuna with 1 tablespoon of olive oil and toss it.
Step 3: Place the tuna onto each of the skewers.
Step 4: Combine the lime juice, ¼ cup oil, and cilantro. Season this with the salt and pepper. Put aside three tablespoons of this mixture.
Step 5: Brush the grill grates with the remaining 1 tablespoon of oil.
Step 6: Grill the tuna, turning the skewers and brushing the tuna with the lime sauce. Cook to desired level of doneness, approximately two minutes per side for rare.
Step 7: Place the skewers on a serving plate and brush them with the remaining lime sauce.
Step 8: Variations of this recipe include placing pineapple, tomatoes, peppers, and mushrooms on the skewers with the tuna. The skewers can be served with side dishes such as rice. You will have a tasty and healthy dish!
