Here is a great snack that is a quick fix. Potato skins are one of those due to their versatility and they make a perfect mid-afternoon treat as well as a great appetizer for game day. These can be topped with a variety of ingredients including bacon bits, chives, cheese, and sour cream. Here is a recipe for baked spicy potato skins, a low-fat alternative to the fried variety. This recipe yields 24 potato skins.
You will need:
- 4 large russet potatoes
- ¼ cup olive oil
- 1 ½ teaspoons curry powder
- 1 ½ teaspoons chili powder
- 1 ½ teaspoons ground coriander seed
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Step 1: Preheat oven to 400 degrees Fahrenheit.
Step 2: Bake the potatoes in the oven for one hour. Remove them from the oven but do not turn off the appliance.
Step 3: Cut the potatoes in half lengthwise. Let them cool for approximately ten minutes.
Step 4: Scoop out the majority of the potato flesh, leaving about ¼ inch of potato flesh against the skin. This flesh can be used in a mashed potato recipe.
Step 5: Cut the potato halves crosswise into three pieces.
Step 6: Pour the olive oil into a small cup. Dip each piece of potato into the olive oil, then place the piece on a baking sheet.
Step 7: Mix the spices, salt, and pepper. Sprinkle this mixture over the potato skins.
Step 8: Place the sheet of potato skins into the oven. Bake for 15 minutes or until the skins appear brown and crispy. Immediately serve. As mentioned above, the skins can be covered with ingredients like cheese or bacon bits. They can also be served with a side of sour cream.
