Oatmeal cookies are the easiest cookies to make, but have more ingredients than most other types of cookies. Oatmeal was once considered the poor man’s meal, and has now made its way into America’s kitchens for cookies and bread. There are many variations on the oatmeal cookie, from adding nuts and raisins to rum flavorings. This recipe will yield 5 dozen, 2 inch, plain oatmeal cookies.
You will need:
- 2 cups flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 2 teaspoons cinnamon
- 1 1/3 cup of butter
- 1 ¼ cups of sugar
- ¾ cup of packed brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 ½ cups fast cooking oats
- large bowl
- electric mixer
- whisk
- ungreased cookie sheets
- 1 cup nuts
- ¾ cup of raisins
Step 1: Preheat your oven to 350 degrees Fahrenheit. Using a large bowl, add the flour, baking powder, baking soda and cinnamon. Mix well with a fork or whisk until all the ingredients are blended together and no individual ingredients are seen.
Step 2: Use the electric mixer to cream together the butter and sugars. Slowly add one egg at a time to the mixture, and beat the mixture well until no egg is seen as an individual ingredient before adding the next one. Continue to do this after every egg is added.
Step 3: Place the vanilla extract into the mixer and blend well. Add the oatmeal slowly to your dry ingredients, and slowly mix together to avoid clumps or lumps of flour and oats. Add all the ingredients into the mixing bowl with the butter and egg mixture. Mix on high for about 2 minutes with the electric mixer, or until the entire mixture is thick enough for a spoon to stand in the center unassisted.
Step 4: Drop the mixture by the spoonful, onto the ungreased cookie sheets. Bake in the preheated oven for about 12 minutes, or until the cookies are light brown on the edges. This will create a chewy cookie. If you want a firmer cookie, bake for 14 minutes and the edges will be a darker brown along with the bottom of the cookies. You can add nuts or raisins to the mixture prior to baking. For this recipe, you would add a total of ¾ cup of raisins or 1 cup of nuts to make an amazing oatmeal cookie. Let them cool until they are totally cool to the touch so they will retain the perfect oatmeal cookie shape!
