Meatballs make a tasty addition to any meal that includes pasta but they can also be used in casseroles, or just served on a bun with some sauce and cheese to make a meatball sub. There are many meatball recipes, some requiring only ground beef, while others use a combination of beef, veal, and pork. The best meatball recipes call for fresh bread crumbs and freshly grated cheese. Here is an easy way to make meatballs that will yield eight servings.
You will need:
- 1 pound ground beef
- ½ pound ground veal
- ½ pound ground pork
- 2 cloves garlic, minced
- 2 eggs
- 1 cup freshly grated Romano cheese
- 1 ½ tablespoons chopped Italian flat leaf parsley
- 2 cups stale Italian bread, crumbled
- 1 ½ cups lukewarm water
- 1 cup oil
- Salt and ground black pepper, to taste
Step 1: Combine the veal, beef, and pork in a large bowl.
Step 2: Add eggs, cheese, parsley, garlic, salt, and pepper to the meat mixture.
Step 3: Blend the bread crumbs into the mixture. Add the water slowly, pouring ½ cup at a time. Use a bit less water, if desired. The result should be a mixture that is very moist but can hold its shape when rolled.
Step 4: Shape the mixture into balls.
Step 5: Heat the olive oil in a large skillet placed on a burner.
Step 6: Fry the meatballs in several batches. Once a meatball is slightly crisp and very brown in color, remove it from the heat and drain it on a paper towel. If the mixture is too moist, cover the skillet while the meatballs cook. This will allow the meatballs to better hold their shape.
Step 7: If serving the meatballs with sauce, place the cooked meatballs into the sauce and cook these items for 15 more minutes.
