How To Make Ham, Scallion, And Ricotta Tart
Brunch is a post-holiday favorite because it allows weary cooks to serve two meals in one. Most brunch recipes are not difficult to prepare and they yield enough to feed even the hungriest crowd. This tart is filled with cheese, herbs, ham, and scallions, creating a flavorful and filling meal for the entire family.
You will need:
• 2 or 3 bunches scallions
• 1 13.8-ounce tube of refrigerated dough for pizza crust
• 1 large egg
• 3 tablespoons unsalted butter
• ½ cup ricotta cheese
• 5 ounces of deli-sliced ham, cut to form ½-inch pieces
• ¼ cup heavy cream
• 3 tablespoons fresh parsley, chopped
• 2 tablespoons fresh tarragon or dill, chopped
• Fresh ground pepper
• Baking sheet
• 9-inch fluted tart pan
• Large skillet
• Medium bowl
• Whisk
• Kitchen knife
• Oven
Step 1: Put the baking sheet onto the top oven rack and preheat the oven to 425 degrees Fahrenheit. Use 1 tablespoon of the butter to grease the tart pan. Line this pan with pizza dough, pressing the dough carefully against the sides of the pan. Trim any excess dough.
Step 2: In the medium bowl, whisk the egg, cream, and ricotta cheese. Mince green scallions with the kitchen knife, creating 2 tablespoons of minced scallions. Add these scallions, dill, and parsley to the ricotta mixture. Use pepper to season.
Step 3: Slice remaining scallions into pieces that each measure ¼ to ½-inch.
Step 4: Place the remaining 2 tablespoons of butter into the skillet and heat the butter on high heat. Add 2 tablespoons water and the scallions sliced in Step 3. Cook about 3 minutes until the scallions become tender and begin sizzling. Remove the skillet from the stove and add the ham. Spread this mixture onto the pizza crust, reserving a few tablespoons. Pour the ricotta mixture on top and then add the remaining scallion mixture.
Step 5: Place the tart pan on the preheated baking sheet. Bake until the crust appears golden and the filling has set, approximately 20 minutes. Allow the tart to cool in the pan for 5 minutes. Remove the tart from the plan and slice it into the desired serving sizes.
